Garden Veggie Scrambled Eggs

Okay, I'd say today is a day to celebrate!
Constant morning sickness for the last 4 months has basically kept me from doing hardly any cooking. I have an anti-nausea medicine that keeps me moving and normal during the day, but mornings before it kicks in, and in the evenings when it's started wearing off haven't been fun...hence, not a lot of cooking. My poor hubby! The good news though is that it's getting better FINALLY! 23 weeks along, it's about time!! Anyway, this morning I wasn't feeling wonderful, but good enough that I actually did a little cooking! I really wanted to make my husband breakfast, and take it to him to enjoy in bed before he got up. I decided I'd ease into it (since I still wasn't feeling great) with a HALF homemade breakfast meal. I cheated on the french toast and waffles part (I used frozen ones :)) but I didn't cheat for the second half and made scrambled eggs to go with.

Now, this isn't a fancy recipe. It's not really even a recipe at all, it's more just a suggestion of some things you can add REALLY EASILY to make delicious, and healthy scrambled eggs.

Basically, I gussied up the eggs by adding
-chopped spinach
-red bell peppers, diced
-diced green onions
and a little cheese on top!

Like I said, easy, not really a recipe.....but its something that I'd highly recommend for a tasty breakfast :)
Plus, they looked REALLY pretty :)

Berry Orange Fruit Smoothie

OHHHHHHHH MAN.
It has been a LONG time since I've put anything up here.
For the first few months after summer, I was just super busy settling into my internship an getting in the flow of things so I never ha time to try new recipes. I just stuck with what was familiar, because things that are familiar to cook are quicker and easier. Once I got into the flow of interning, and I finally started to find myself with a little  more time....I found myself morning sick. 24/7. Yuck. I have an anti-nausea medication that helps (and that's the only way I survived school) but it's pretty worn off by evening, and so I always feel crummy and therefore, certainly not like cooking. Hence, the cooking blog has suffered. Badly.  Anyway, the constant nausea is finally starting to fade a bit (YAY!) and I may actually start posting things again!

Starting with today.
Can I just say how excited I get when I find really really really really really good fruit sales??? Oh man. I went to Sunflower market after school today and found packages of strawberries for $1.27, packages of blackberries for $.88 and really good deals on some other produce. Then, this evening we went to Buy Low and oranges were 8  lbs/$1.....which is stinking awesome! We got like 15-20 oranges for like $.80! SO awesome!  Anyway, with all the good grocery deals we found today, our fridge is PACKED with fruits and veggies (the ones I mentioned, plus cucumbers, bell peppers, granny smith apples, cherry tomatoes, lettuce heads, bananas, regular tomatoes, cilantro, tons of baby carrots etc). For the next few weeks, I am going to be one healthy mama!  Maybe that will make up for the last while where ice cream and rootbeer were the things that settled my stomach most when I was sick :) Seriously, I think baby has a sweet tooth just like Ben :) I take that back...not a sweet TOOTH, more like an ENTIRE set of sweet choppers.

Okay.....now on to the recipe!  A berry orange fruit smoothie.
It's super easy.
I just had so much fruit all over, I threw some of it together, and really liked how it turned out. Usually, when I throw random fruits together into a smoothie, I get all excited about how yummy it's going to taste, but it never tastes like I think it will. It always has a little too much this or that or it lacks something that makes it truly delicious. I've never been super impressed with a fruit smoothie I've made before. I still love making them, I guess I've just never had one hit the flavor spot quite like this one. This could totally be the next jamba flavor!

Alright, here's what you do.
Easy.
 In your blender (I used a magic bullet cup, so the recipe is small, but you could make it bigger), put:
6-7 Blackberries
2-3 strawberries
3-4 big spoon fulls of strawberry yogurt (and by big spoon fulls I mean use a big spoon)
3/4 of an orange (I used a medium to small sized one. Peel all the white, bitter stuff off really well )
5-6 ice cubes

Blend together.
Ta Da!
It comes out this beautiful dark purple color, and it tastes simply delightful :)
TRY IT!!!!
I would take a picture, but I already downed the one I made so the picture would only be of a magic bullet cup with slightly purple smoothie remains clinging to it's sides. Not so pretty.  Maybe I'll add a picture tomorrow when I make another one.
Or maybe you should just make your own :) Then you'd know what it looks like.

P.S. It drives me bonkers that any word I put in my post that may have a Wikipedia article about it automatically gets underlined and turned into a link. Like smoothie, for instance. No one reading my blog needs a link to an article to tell them what a smoothie is. It drives me NUTS. Does anyone know if you can turn it off? And if so, how?

Black Bean Salsa

I just realized the other day that I had never posted this recipe on here, and it's such a SHAME!!! This is one of my favorite snacks ever....I LOVE this stuff! It's super easy to make, tasty, and pretty healthy too!
Try it, you'll LOVE LOVE LOVE it.


Black Bean Salsa 


2-3 Tomatoes, diced
1 can black beans, rinsed
1 can black eyed peas, rinsed (you can do 2 cans black beans if you don't have these)
1/2 bag frozen corn, cooked
Chopped cilantro, maybe about 1/4 of a bunch. I put in a bit more than that because I LOVE cilantro
a pinch of salt and pepper
2-3 Tablespoons italian dressing


Optional:
Diced green onions
Diced avocado
a squirt of lime juice
(I'd reccomend all three)


SO GOOD! I'll make a batch of this stuff and my husband and I will eat it all at once! We love eating it with chips, but it's also good on chicken enchiladas! (The recipe for those is HERE)

Eclair Dessert

This is one of my all time favorite deserts, and it's perfect for summer! You don't even have to turn on the oven to make it!


Eclair Dessert
1 package of graham crackers
2- 3 1/2  oz French vanilla instant pudding 
                         (I like using at least 3 oz for sure....2 oz just isn't enough!)
Milk (however much is needed to make the pudding)
9 oz cool whip

Make instant pudding according to instructions on box. As soon as you're done making it, mix in cool whip. Layer a 9X13 with whole graham crackers.  Spoon on 1/2 the pudding mix. Make another layer of crackers, and the spoon on remaining pudding mix. Top with a layer of crackers, and seal the crackers with the frosting (see below).   Let chill for at least 20 hours before serving. (Trust me...this step is important :) It stinks being patient....but it's worth it!)


Frosting
1 1/2 cups powdered sugar
3 Tbsp milk
3 Tbsp melted butter
1 Tbsp cocoa

Melt margarine. Add cocoa. Add in sugar and milk. Beat until smooth.

Ebelskivers

This is a post I wanted to put up just to show something fun I made the other day.

So these little puppies are AWESOME!!! They're called Ebelskivers. What are ebilskivers you might ask?? They're traditional danish pancakes, and they're HEAVENLY when topped with vanilla sauce!!!  The only downside is you have to have a special pan to make them, and I seriously don't know anyone besides my family and various extended family that has one. . Here's what they look like.






If anyone happens to have access to a pan, let me know and I'll give you the recipe, but since I figure no ones does, I didn't type it up here. I just wanted to show how fun they are! 

Limonada (Brazilian Lemonade)

Alright, so I had two recipes for Limonada, so I decided to put them both to the test!
The first one is a recipe I got here, from one of my favorite cooking blogs. The second one comes from my uncle who served his mission in Brazil.

We tried the both

RECIPE #1    (go to link above)

RECIPE #2
 2 1/2 limes
Water (fill blender 3/4 of the way)
1/2-3/4 cups sugar
Ice

Cut limes into quarters. Put pieces (including peels) in the blender with all the other ingredients. Blend and  strain.




We drank an entire pitcher of each
BUT
we came to different conclusions. 

I liked recipe #1 more, but Ben liked recipe #2 because he said it tasted more like what he was used to drink on his mission.
So....if you want something yummy that's more authentic, make #2. If you want something less authentic but possibly a little yummier, make #1.

Dutch Babies

Dutch babies (otherwise known as german pancakes) are one of my favorite breakfast items! Just make them, cut them into 6 pieces (the 4 corner pieces are always the best :)) , and cover the pieces with powdered sugar and  syrup for a satisfying, filling breakfast!

(These ones don't look quite normal....I'm not sure what happened but they usually have more of a crust on the outside and they don't look quite so rough on the inside. These one still tasted yummy, they just looked a little different than usual)




Dutch Babies
 1/2 C butter
6 eggs
1 1/2 cups milk
1 1/2 cups flour
 Put butter in 9x13 baking dish and melt it in the oven at 425. In the mean tim, mix batter. Put eggs in blender and whirl on high for 1 minute. With motor running, gradually add milk and then flour. Whirl for 30 seconds. Pour batter into the hot baking dish over the melted butter. Bake until fluffy 20-25 min

Best EVER Square Breadsticks

Be careful, these puppies are addicting!
Seriously.
They're the best bread sticks ever!

First, you make the dough and the topping 
 Then, you stretch the dough out a bit  (just with your hands)so it's bigger and flatter and plop it in the center of a rimmed cookie sheet. Then, using the back of a spoon, push the dough out to the corners so it's flat and even in the pan. It doesn't have to be perfect, as long as its fairly flat, somewhat even, and goes all the way to the edge of the pan, you're good. Then spread the topping on.
 Bake, Cut into squares, and you get these puppies!!!



This recipe came from my mom, who I think got it from an old neighbor of ours

Bread
1 T yeast
1 1/2 C warm water
2 T sugar
1/2 t salt
3 1/2-4 C flour

Soften yeast in warm water. Mix dry ingredients. Add to yeast and water. Knead for 3 minutes on flour-coated surface into soft dough. Let rest 10 min. Press onto pan (greased) to edges. Spread topping over dough, bake at 350 for 10-15 min, cut into squares. EAT and ENJOY!

So good dipped in marinara sauce! They make a great movie snack :)
